1-- Baked Beans (2 cans) from any pork n beans or vegetarian beans. Maple syrup just 2 Tbl may add more later if desired, 1 tsp. mustard, salt n pepper, 1/2 cup bbq sauce, fried onions or fresh or dried, onion spice, imitation bacon bits, liquid smoke, smoked paprika or soy sauce; to your taste......any of those that you have. Bake for 25 minutes. Serves with garlic toast.
2-- Country Bean Soup. Mash half a can of northern beans, and add 1/2--3/4 c broth (bullion and water). Add, carrots, onions or dried, pimientos, garlic, green herb like oregano, 1/2 cup small pasta for soup, imitation bacon bits, celery or dried tomato, smoked paprika, shredded hash brown potatoes.....all optional . May add a splash of milk optional. Salt n pepper.
3-- Ramen Noodles Deluxe, Add 2 c water/broth to the Noodles & set aside. Cook frozen broccoli in water to cover, in the microwave for four minutes and then mix altogether with the ramen and cook for 6 more min in microwave. You are using the broccoli water. You are using the seasoning packet. Add leftover sausage or PB meat, or a poached egg, if desired. Chives, or crunchy noodles to garnish.
4-- Green Pea Soup from canned green peas drained: Mash 3/4 the peas and cook n stir altogether.....2 cups broth, dried onions, salt n pepper, crushed carrots....optional a splash of milk.....imitation bacon bits, or pimientoes.
5-- Ravioli Stew. Frozen or canned Ravioli. Cook 1C frozen broccoli in heated broth, in the microwave 10 minutes, just to cover. In another bowl, anything else you like, pimientoes, crushed carrots, onions, asparagus, peas, garlic......and the ravioli. Cook altogether in microwave, adding 2 more cups BROTH....10 minutes or more if ravioli is frozen.......2 min.
if it is already canned. Add as much or as little of the broth to make the (stew or soup) to your liking. Add a 1/2 C of sauce: Cream, or canned broccoli cheese soup or cheese soup, or Alfredo sauce or spaghetti sauce. Stir and reheat for a few minutes; serves two.
6-- Rice, Meat, Gravy Dinner. Cook rice (for 2-3), 15 min. in microwave. Add cream of mushroom or onion soup with 1/2 can water to make gravy. Add any canned meat you have : corned beef or chicken or beef or veggie meat or sausages or PB meat, roasted in oven. Stack it: rice, gravy, meat on top, in serving bowls.
7-- Asian Salad. Any mixed greens that you have. Drain a can of black beans. Use roasted sunflower, or sesame, seeds to taste. Add a few drops of sesame oil to your dressing. This is also good if you have a chopped tomato, and/or avocado.
8-- Broccoli Cheese Meatball Stew. Cook frozen broccoli in microwave 5 min., covered with water . ADD one can Broccoli Cheese condensed soup. Roast 6 frozen meatballs or PB meatballs 6 minutes in H-A oven. Blend altogether and reheat in microwave for 2 minutes. Stew for two.
9-- Creamy Carrot/ Bacon Stew. One can cream of chicken condensed soup (or C of mushroom). One and one third can of water. 1can drained carrots, sliced or crushed in your hand. One Tbl. imitation bacon bits. One third can northern beans, and blend/cream the rest. Add altogether and microwave 4-5 minutes. Serves two.
10-- Turnip Greens and Peas: In a couple of oval cassolette ramekins, line with canned, drained turnip, or, collard greens. Clear out a hole in the middle and add field peas n snaps, or, black eyed peas in the center. Heat in the microwave and then drizzle the quick sauce over the cassolettes. Serves two.
THE SAUCE: You start with ½ cup mayonaise. Mayo is a little thick, so add 2 Tbsp. water to thin it out. And then we cheat the tang that crema is known for with 1 clove of grated garlic (or 1/2 tsp powdered garlic), and a pinch of salt, or Mrs. Dash.
11-- Hummus Sandwiches or Subs : Spread prepared hummus on both sides of the bread. Stuff the center with any of these that you have: onions n french fried onions, lettuce n tomato, tomato n cucumber, olives n cucumber, dill pickles n onions, cooked squash n pickled squash, avocado n tomato, pickled onions n olives, pickled gardenia vegetables with tomato......Drizzle a dressing of your choice: Olive Garden, Ranch, Creamy Italian, etc...
12-- Chick Pea Salad Sandwiches or on a bed of Greens : One can drained chickpeas; chop a few seconds in a mini food processor. 1 Tbl. chopped pickles. 1 tsp. lemon juice. 1/2 tsp. each onion and garlic spice. 2 Tbl. mayonaise. Salt n pepper. Serves 2-3 sandwiches or salads, with greens. May garnish with lettuce, tomato, olives, onions, etc....
13-- Oatmeal cooked in the microwave with a can of drained peaches on top. Serves 1,2 or 3.
14-- Tostadas: You can buy a large bag of tostadas that will provide a lot of meals! 1 or 2 cans of refried beans, in a hot frying pan or even the microwave. Add 1/4 cup milk, 1/4 tsp
onion spice & garlic & cumin. Any cheese that you like (even sliced cheese OK). Heat and stir until creamy. Spread on the tostadas. Garnish with any of these: cheese, onions, peppers, pimientos, sour cream, lettuce, tomatoes, olives, avocados, salsa... Serves 1-2-3 people !
15-- Stuffed peppers: 1-2 cans refried beans. Stir in 1/3 can nacho cheese condensed soup, or cheese soup. Add 1/4 tsp each cumin and onion spice. Add chopped fresh onions, and cook 10 minutes in a pan or microwave, (stirring). Stuff halved fresh peppers. Place a little water in the pan to steam the peppers in the oven for 20--25 minutes, 375, preheated. Garnish while hot with cheese soup and tomatoes ( or pimientos), and/or olives.
16-- Rice n veggie Soup: One can of your favorite vegetable soup. Add two cans of water, and 1 tsp. bullion. Add any spice you like: onion, garlic, basil, oregano....Heat in the microwave with a couple of cups of cooked rice. This should serve two, but adjust the water a little if you want to. Rice can be cooked in the microwave too, for about 15 minutes.
My$. Gnocchi, peas, carrots, spinach, with water and sauce-- (Alfredo, CRM of mushroom, cheese sauce, etc..)
$. Can of vegetable soup with water and pasta and squash
$ Microwave steamed Rice with CRM of mushroom or cheese soup, add water and broccoli, or peas n carrots
$. Sweet potatoes and carrots chunks stewed. Roast on a pan with oil, maple syrup, salt, nutmeg, rosemary, thyme....about 25 more minutes.
$ Can Lima beans, drained Corn, drained crushed Carrots with chopped onions topping and 1/2 PKG. Cream gravy.
$ Instant mashed potatoes 2 adult servings and add 1 PKG. country gravy mix. Add water and microwave 5 min.. Butter or gravy to garnish; it has a very rich flavor already.
$. Chickpea Chicken-like Patties, Fry or Roast....1 can chickpeas drained, less 1 TBL. aqua faba. Place in a blender, slightly lumpy. Add aqua. Add cracker crumbs or breadcrumbs. Blend in 1/2 tsp pepper, 2 tsp. chicken bullion, poultry seasoning, 1 TBL Parmesan, and 1 tsp mustard. Blend more breadcrumbs to cover both sides of the patties. Lightly oil spray both sides and fry or roast for 30 m.
$ CREAMY SUMMER EGGPLANT TOPPING : 1 can cream of mushroom soup set aside. 1/2 cup tomatoes or cherry tomatoes or sundried. 3/4 eggplant cubed. 1 can drained corn. 1/2 cup macaroni. Just cover with chicken broth. Microwave for 25 minutes. Blend in the soup. May use a little margarine over the top if desired. Use this topping over a potato, or rice, or orzo...
